The process of eutrophication in a water body is normally a slow aging process; however this process gets accelerated by human activities. A major quantum of oxygen in the water in the ocean is consumed by bacteria at the time of feasting on algal blooms in the excess nutrients. Oxygen is a prime requirement for the living of various organisms and if the oxygen levels reduce beyond certain limits, it causes suffocation; thereby driving these organisms from that area. Such a dead zone occurred in the 8,000-sq-mile area at the Mississippi River mouth in the Mexican Gulf and this resulted in complete stoppage of shrimp fishing for a number of years.

The problem here is that it is essential to strike a balance between the effect on climate and the extent of dead zones permissible in the oceans. Two researchers from Pittsburg have analyzed the “nitrogen footprint” of various types of foods. They estimated the nitrogen output for various types of foods that are responsible for creation of harmful dead zones during various phases of the product lifecycle – cultivation, processing, packing and transporting. They compared the nitrogen footprints with the carbon footprints for various types of food groups.

They found that the food group that causes maximum damage for climate as well as eutrophication is red meat. One lb of beef causes 22 lbs of greenhouse gases and 2.5 oz of polluting nitrogen. On the other hand, one lb of carbohydrates and cereals result in releasing 3 lbs of greenhouse gases with negligible pollution of nitrogen.

Hence it is essential that the policy makers, consumers and industry make sure that for assessing the product sustainability, they look at not only carbon footprints, but also nitrogen footprints.
